Back to Business!

It has been 3 weeks! Whoops, time flies when you have 4 midterms and spring break back to back! Speaking of, Florida was awesome....all except missing our flight back (long story). However, we turned our misfortune into another vacation: can you say CROSS COUNTRY ROADTRIP?! 20 hours and 6 states later, we arrived back in Iowa, only to be met by a snow storm...BLAH. 
A downside of vacation, like usual, was the less-than clean eating that I did. My main Florida vice: Krispy Kreme. Yup, I'm a donut fattie. Dinners were actually really easy to stay on track with because we went out to nice restaurants with healthy choices :)
But back to Iowa means back to BUSINESS! Since I've been back I've been a clean eating, weight lifting machine! And it feels oh soooooo GOOD. Last weekend I offered to DD for all of my friends when we went downtown to the bars, and it felt amazing to wake up the next morning feeling rested and ready for a serious workout while they nursed their hangovers.
I've been following more and more clean-eating "bodybuilders" on Facebook and Instagram to keep me motivated and it has made me realize even more that this is a lifestyle, not a diet plan!

Healthy Fats!

Less than 2 weeks until SPRING BREAK!
I am very excited, especially because of all the hard work John and I have been putting in lately in the gym, and kitchen!
These last days leading up to the trip are going to take serious concentration, but I know that I've made too much progress with my goals to fall back now!
John also just started a new job here in Iowa City so that he doesn't have to commute for over an hour a day! We are VERY excited about that :)
Here is what we had for dinner last night!

Salmon with asparagus and wild rice!
I baked the salmon in the oven on 450 for 20 minutes and it was perfect! I got a thicker cut from the HyVee meat counter this time, usually it takes less than 20. That's another reason I LOVE salmon! So quick and easy :)
I sauteed the asparagus with pepper and olive oil, covered on low heat for about as long as the salmon.
Mine and John's portion sizes for everything were much different obviously, since he is trying to gain weight and I am trying to lean up! But this is a staple meal for both of us :)
Mine was a total of 415 Calories:
1/2 cup rice(100 Calories)
5 spears (20 Calories)
 133g Salmon Fillet (295 Calories)
A big difference in the way we used to cook and how we're cooking now: olive oil instead of butter! ALWAYS. I used to not even think twice about adding butter to a pan before I sauteed something, now I don't even own any! And it really does taste better. Healthy fats are KEY if you're striving to be a healthier version of yourself (and they do wonders for your hair, skin and nails).
 
Have a great day! And if you're on the home stretch of working for that spring break bod...remember to keep a running countdown of days leading up to it. A great way to do it would be having a sticky note for each day, and take one down every day that you eat clean and exercise! It keeps you accountable and really feels like you've accomplished something when you see the days go away one by one! I do this in my personal planner that I also use for school, that way I can't avoid it and get to see my progress every day!
